RESUMEN
El presente estudio tiene como propósito analizar la formación profesional que poseen los bármanes que prestan servicios en restaurantes y bares de la ciudad de Manta, Ecuador. Se asumió una metodología descriptiva de campo, apoyada en entrevistas estructuradas, observación directa y revisión bibliográfica para identificar el perfil laboral de este tipo de trabajadores. Como principales resultados se observa una deficiente preparación profesional de los sujetos investigados, así como la falta de articulación entre la empresa privada turística local y las instituciones educativas responsables de la formación de estos trabajadores. Se concluye que es necesario buscar estrategias que permitan mejorar de manera sustancial la capacitación profesional de los bármanes, pues ello contribuiría en mejorar la calidad del servicio que ofertan dentro de las empresas del sector turístico.

ABSTRACT
The purpose of this study is to analyze the professional training of bartenders who provide services in restaurants and bars in the city of Manta, Ecuador. A descriptive field methodology was assumed, supported by structured interviews, direct observation and bibliographic review to identify the employment profile of this type of worker. The main results include poor professional preparation of the subjects investigated, as well as the lack of articulation between the local private tourist company and the educational institutions responsible for the training of these workers. It is concluded that it is necessary to seek strategies to improve substantially the professional training of the bartenders, as this would contribute to improving the quality of the service they offer within the companies of the tourism sector.
