Resumo: O tráfico de escravos africanos para a América marcou a vida dos seus descendentes pelo mundo afora. Com uma posição geoestratégica, as ilhas de Cabo Verde serviram de ponte entre África e América desempenhando um importante papel no processo de disseminação do tráfico negreiro. De toda herança cultural, a tradição alimentaria se traduz em uma releitura da identidade do lugar. Esse artigo objetiva identificar o legado gastronômico dos escravos africanos que passaram por Cabo Verde, especificamente na Cidade Velha, antigo entreposto comercial de escravos, como fomento para o turismo local.  As informações utilizadas foram baseadas em bibliografias disponíveis sobre o tema, informações concedidas por conversas informais com moradores locais e por meio de observação direta em visita ao lugar. Dos resultados obtidos, as comidas tradicionais que marcam a vida cotidiana da população, podem ser um importante recurso para o desenvolvimento do turismo de raízes e da preservação da cultura ancestral.

The flavors of the Cidade Velha: the Sugar Route and its gastronomic legacy as a way to promote root tourism in Cape Verde

Abstract: The traffic of African slaves to America marked the lives of their descendants around the world. With a geostrategic position, the Cape Verde islands served as a communication bridge between Africa and America playing an important role in the spread of the slave trade. Of all cultural heritage tradition feed translates into a rereading of place. This article aims to identify the gastronomic legacy left by African slaves who passed through Cape Verde, particularly in the Cidade Velha, a former slave trading post.  The information used were based on bibliographies available on the subject, information provided by local residents and through direct observation visiting the place. From the results, the traditional foods that make the everyday life of the population, can be an important resource for the development of roots tourism and the preservation of ancient culture
