RESUMEN

La gestión de restricciones físicas, constituye una herramienta necesaria para el desarrollo de la gestión logística, bajo las condiciones actuales en el mundo. Independientemente a lo logrado en materia de logística y cadenas de suministro, constituye una condición insoslayable el desarrollo de herramientas que permitan el empleo eficiente de recursos y faciliten su gestión integrada, para lograr mayores niveles de servicio al cliente. El objetivo del artículo es evidenciar como la gestión integrada de restricciones física logra alta madurez al integrarse a la gestión de riesgos operacionales. Para esto se determinaron los indicadores de salida en la gestión de restricciones físicas antes y después de integrarse a la gestión de riesgos, en un período de diez años en una instalación hotelera. Se tiene la relación de los principales indicadores de salidas, así como el aumento, estadísticamente significativo, de la mejora de los indicadores en el período analizado en el hotel.

IMPROVEMENTS IN THE MANAGEMENT OF PHYSICAL RESTRICTIONS INTEGRATED TO RISKS IN HOTEL SUPPLY CHAINS

ABTRACT

The management of physical restrictions is a necessary tool for the development of logistics management, under current conditions in the world. Regardless of what has been achieved in terms of logistics and supply chains, the development of tools that will allow the efficient use of resources and facilitate their integrated management is an unavoidable condition to achieve higher levels of customer service. The objective of the article is to show how the integrated management of physical restrictions achieves high maturity when integrated into the management of operational risks. For this, the exit indicators in the management of physical restrictions were determined before and after joining the risk management, in a period of ten years in a hotel facility. There is a list of the main departure indicators as well as the statistically significant increase in the improvement of the indicators in the period analyzed at the hotel.
